Enzyme Myths
The role that enzymes can play in servicing a grease trap is frequently misunderstood. Enzymes break down complex grease molecules into their simpler constituents, accelerating the degradation process that occurs naturally in our environment. This is important because the grease molecules do not reform after being treated with enzymes - the bonds that hold the grease molecules together are permenantly broken when they come into contact with the appropriate enzyme (see: Enzyme Basics in the Article Archive). Thus, unlike chemical emulsifiers, Acids, Caustics, and even plain hot water, the use of enzymes does not pose a risk to downstream waste processing facilities.
